We work with each piece on a daily basis. We give it a code and we know who has worked with it, as well as when it was de-boned. We know when it was sliced, and who sliced it. We also know which piece each package has come from, and which client it was delivered to on what date.

Due to this, we comply with all the laws, norms and decrees that are in force.
